What Is Teres Major Steak?

Teres Major

Teres Major Steak is a small piece of meat that is located at the chuck primal of beef. Its name is actually the exact name of the muscle, which humans also have the same muscle at the upper limb.

Although chuck is a hard working section and usually produces tough meat, it’s incredibly tender, just second to Filet Mignon. That’s why it got another name — petite tender, or shoulder tender.

And thanks to the frequent movement of chuck, Teres Major experiences much blood flow and is rich in flavor.

It combines the two desirable features of beef, nice texture and taste, plus it’s not expensive.

This is a rare cut that each cow only produces 2 lbs of Teres Major Steak. It is a skillful and hard job to extract this small cut, but the butchers are willing to do it!
